Super quick lunch idea.
I had one of those pocket-less pitas and I usually just cut them into pieces, toast them and dip them in some hummus.
Time to try something a little different. So, take a pocket-less pita.
Spread some tomato paste on it (In the pic, I used hot pimento paste). Add your toppings.
If you look closely, I have bok choy, zucchini, mushrooms and sun-dried tomatoes.
I topped it with a bit of garlic pepper. Toss it in the oven at 350-400F, for around 5-10 minutes. I cooked mine on a pizza stone. Basically cook it until the pita starts to go golden/brown.
Plate and cut into quarters. Careful, it will be pretty hot.
